If you haven’t had the most juiciest tomatoes on a slice of sourdough with mayo, you haven’t lived. This Tomato Toast is the best of summer on a plate. Technically this would be considered a tartine, which is French for an open faced sandwich, and this sandwich could not be easier. Perfect when you can’t be bothered to cook anything. For this recipe you want to use the best tomatoes you can find, preferably local and heirloom. Also, I recommend Hellman’s mayo, it’s a staple in this house. No miracle whip here please! Chives are totally optional, but highly recommended as they add a slight onion flavor and freshness.

- 4 slices of sourdough, toasted
- mayonnaise
- 2 small ripe tomatoes, cut into 1/8" thick slices cross-wise
- flaked sea salt
- chopped chives, optional
- Slather the sourdough slices with desired amount of mayo. I use what might be considered a little too much. Top with slices of tomato, sprinkle generously with salt and chopped chives. Serve immediately.
